A new type of burger has entered the international burger scene. Yesterday it was #internationalburgerday and we didn’t want to be without a veggie burger. But we had no hamburger buns at home, so what did we do? Well with the help of some tomatoes we created this delicious veggie burger recipe. Guacamole, grilled halloumi and aubergine served between a tomato with some fresh salad, yum! We call it the ‘matoburger’ (tomato + burger), this recipe could be done with the usual hamburger bread but if you have tomatoes at home test this first!

Ingredients
- 200 g Halloumi
- 50 g Auburgine
- 3 Avocado
- 1 small piece finely chopped Red chili
- 1 grated Garlic clove
- 1 tsp Limezest
- 1 tbsp Oil
Instructions
- Start by cutting the aubergine into thin slices. Brush with oil and cook on the grill or grill pan until you have a nice grilled surface. Mix the avocado, chilli, garlic and lime to a nice guacamole, season with a little salt and pepper. Cut to halloumi into thin slices and grill a few minutes on each side. Cut the tomato in half and mount together the tomato burger!
