Finally the Waffle Day is here!
Wait the Waffle day? If your not from Sweden then your probably haven’t heard about it before. But Yes we Swedes have a day dedicated to the Waffle! The traditional Swedish recipe is made of white flour, sugar, eggs and milk but for this year we wanted to make a HappyHealthyHunters version. We think we succeeded in making a healthy waffle recipe! The waffles are made of banana and eggs so they are 100% gluten and lactose free. By using Banana we got sweet waffles that are also healthy for you. If you don’t have a waffle iron, you could make them in a frying pan you will get the best result from a cast-iron pan.

Healthy waffle recipe - Gluten & Lactose free

Ingredients
- 4 Eggs
- 2 Bananas
- 1 Teaspoon Psyllium seeds
- 1 Teaspoon of Baking powder
- 100 grams of Plant yogurt
- 50 grams of Raspberries
Instructions
- Mix all the ingredients in a mixer or with a hand blender. Add some cooking oil into a warm waffle iron or frying pan, bake the waffles until they have got a nice brown color. Serve with plant yogurt and raspberries.
