Healthy Waffle Recipe With Bananas and Eggs

Finally the Waffle Day is here!

Wait the Waffle day? If your not from Sweden then your probably haven’t heard about it before. But Yes we Swedes have a day dedicated to the Waffle! The traditional Swedish recipe is made of white flour, sugar, eggs and milk but for this year we wanted to make a HappyHealthyHunters version. We think we succeeded in making a healthy waffle recipe! The waffles are made of banana and eggs so they are 100% gluten and lactose free. By using Banana we got sweet waffles that are also healthy for you. If you don’t have a waffle iron, you could make them in a frying pan you will get the best result from a cast-iron pan.

Healthy waffle recipe - Gluten & Lactose free

Yield 8-10 Waffles

Ingredients

  • 4 Eggs
  • 2 Bananas
  • 1 Teaspoon Psyllium seeds
  • 1 Teaspoon of Baking powder
  • 100 grams of Plant yogurt
  • 50 grams of Raspberries

Instructions

  1. Mix all the ingredients in a mixer or with a hand blender. Add some cooking oil into a warm waffle iron or frying pan, bake the waffles until they have got a nice brown color. Serve with plant yogurt and raspberries.
